Focaccia
Ingredients
- 500g bread flour
 
- 450ml water
 
- 8g salt
 
- 2g yeast
 
- Butter to grease dish
 
- 15ml olive oil for dish
 
- 30ml olive oil for topping
 
Method
- Mix dry ingredients
 
- Add water
 
- Mix until combined
 
- Keep in fridge, covered, for 12-48 hours. Remove 4-5 times, folding until dough balls up loosely and return to fridge.
 
- Transfer to buttered and oiled baking dish, deflate and leave to rise 2-4 hours.
 
- Dimple, add oil and toppings
 
- Bake immediately at 220 degrees C for ~25 minutes
 
Notes
- Butter to grease dish is important, as with oil alone it is very likely to stick.
