Method

  1. Whisk together egg white and icing sugar until glossy
  2. Combine rum, irish cream and ginger syrup
  3. Pour over ice
  4. Top with meringue mixture
  5. Grate a touch of nutmeg on top
  6. Top with crystallised ginger and a gumdrop on a toothpick
