A christmassy, gingerbread cocktail.
Ingredients
- 60ml black spiced rum
 
- 30ml Irish cream
 
- 30ml ginger syrup
 
- A dash of orange bitters
 
Meringue foam
- 1 egg white
 
- 10g icing sugar
 
To serve
- Crystallised ginger and gumdrop button on a toothpick
 
- Nutmeg
 
- Ice cubes
 
Method
- Whisk together egg white and icing sugar until glossy
 
- Combine rum, irish cream and ginger syrup
 
- Pour over ice
 
- Top with meringue mixture
 
- Grate a touch of nutmeg on top
 
- Top with crystallised ginger and a gumdrop on a toothpick
